    Baked Cheese with Roasted Garlic and Thyme

    Ingredients

    • 1 whole blanc d’oli cheese or camembert style cheese, weighing 400g
    • 2 whole garlic cloves, skin on
    • 4 to 6 sprigs of fresh thyme, finely chopped
    • Salt and pepper to taste
    • Garnishes:
    • 1 small ciabatta bread, cut into small sticks and toasted
    • 2 celery sticks, cut into long pieces
    • 4 spicy cooking chorizo sausages, cooked

    Introduction

    This is a great sharing dish that works well as part of a tapas night in. You can have the cheese prepared in advance and simply place in the oven before serving. The best bit of the dish is the roasted garlic paste and how well it works with the melted cheese. It provides depth and makes the flavour turn BIG. You can also use this paste in fillings, sauces, mashed potatoes, brushed on roasted meats or even in sausage rolls! I like to serve it with toasted bread pieces, celery sticks and grilled chorizo sausage but you can serve it with other garnishes of your choice, whole nuts, dried fruits or cured meats.

    Method

    1. Preheat the oven to 200°C/400°F/Gas 6.
    2. Place the garlic cloves on a small baking tray, drizzle with a touch of olive oil and roast in the oven for ten minutes. Remove from the oven and allow the garlic to cool down. Peel the garlic cloves and finely chop them until you get a smooth paste.
    3. Remove any plastic packaging from the cheese. Cut the cheese in half horizontally and spread with the roasted garlic paste and chopped thyme. Season with salt and pepper.
    4. Place the cheese in an oven proof round dish. Bake in the oven for ten minutes, or until the centre of the cheese is melted.
    5. Serve the baked cheese with the toasted ciabatta, the celery sticks and some spicy cooking chorizo sausage.
