FOOD DESCRIPTION
Agusti Torello Mata Balsamic Vinegar is made out of sweet cava aged between 12 and 16 months. This cava is then aged in oak barrels that have carefully been filled up to 2/3 of their capacity. This creates a surface on which a veil can form of acetobacter, a bacteria which transforms alcohol into acetic acid. The process takes 2 years of barrel ageing to obtain this special vinegar.
Agusti Torello Mata Balsamic Cava Vinegar is a white, fresh and citric balsamic vinegar, delicate but vivid, bright and refreshing. The bottle comes with a pump action aerosol allowing you to spray a fine layer of piquancy over many foods items.
FOOD PAIRING
Ideal for vinegar reductions, game, fine and spicy carpaccios, Asian cuisine, salads and desserts. Excellent with vanilla ice cream and to complement any Mediterranean dish.

An annual creation of over 500,00 bottles of cava they are the benchmark for cava and for a family run business. Based in Valls D’anoia-Foix Valls an historic area for Cava in Spain. The area allows for them to produce wines with great singularity and allows for the flavours of the area to shine through in the wines. They have meticulously selected plots to ensure the maximum expression, quality and personality of each variety to come through.
