Our Spanish Mahon Cheese is made by Son Mercer de Baix, an old family business who make this cheese in the traditional manner; all by hand, ladling the cheese into cheese cloth and turning by hand as they age. The cattle range on the lush pastures of central Menorca giving the cheese its fragrant, lactic bite. As the cheese matures it is rind washed in paprika giving the cheese its characteristic orange colour.
